Cooking Chicken

This was good but could be better. I’m not very good at cooking chicken, I tend to over-do it because I’m too paranoid it wont be cooked and it winds up dry/chewy. Any tips anyone?

Chicken breast strips dipped in flour, then egg/milk/garlic, then breadcrumbs/parmesan with mashed potatoes, spinach and a sauce thing of cream-cheese/gherkin-spread/chives.

    The easiest way for me to cook with it is to run a pan dry (or with a tiny bit of oil) and go from about three-quarter heat (on an electric stove – it sucks but it’s what i’ve got to deal with) and cook it until you have a nice golden colour all over the chicken.

    Then i leave it in the pan about two minutes from it obtaining that colour and serve. Pretty much perfect. 😉
